I have to admit, I am little "over" food right now. Leftovers specifically. But the family must still eat this week! SO, here is the line up:
Monday: Nachos! (read: anti-thanksgiving!!) I will simply bake chips and shredded cheese for a few moments and then serve with chunky bean dip (READ BELOW!!!) - the kids love this and it has black beans and avocado in it, so I feel okay about a "snack" for dinner.
Tuesday: Turkey Pot Pie... using leftovers (frozen turkey) and this recipe - however I will buy pie crust - I am not that talented.
Wednesday: I get dinner out with the girls... the family gets spaghetti!
Thursday: Calzones... pretty much homemade pizza with the crust folded in half! Again a kid-fav and yummy for the adults when we get to stuff ours with good veggies that the kids won't eat!
Friday: Football Stew. Get an account here and then search recipes by name... it is SO easy and SO good!
Chunky Bean Dip:
(this isn't so much a recipe as a step by step on how I throw this together!)
Ingredients:
1 Avocado
1/2 can Black Beans
3 Roma Tomatoes
1/2 can Whole Kernel Corn
Handful of Cilantro
2 Tbs Olive Oil
1 Tbs Red Wine Vinegar
1 Lime
Rough chop avocado, tomatoes and cilantro. Rinse corn & black beans and gently mix with previous veggies. In separate bowl add olive oil, vinegar and juice from lime - whisk together and pour over beans and veggies. Salt & Pepper to taste.
