meal planning monday!

So usually I do Meal Planning Monday on my other blog... but I have combined blogs so it is making it's debut here at good life for less! What fun! I love debuts!

Here's the meals for the week: (I NEED YOUR HELP ON WEDNESDAY!!!)

Sunday (today): Ham & Cheese Croissants with Green Beans - C'est tres francais, non? Don't be fooled here... thanks to Pillsbury they were easily made with refrigerated crescent rolls some shredded cheese and sandwich meat. I am constantly looking for "kid" friendly yet diverse meals for our family of four. I thought this one would for sure hit a homerun! Too bad I live with a four year old food critic. He hardly touched the croissants... does any one know what could have been BETTER about this meal?!?! So after explaining to him that it was essentially bread, meat and cheese he slowly swallowed it. Cold. Whatever.

Here's the rest of the week...

Monday: Smarter Fettuccine Alfredo, I am going to prepare this recipe and then add broccoli and rotisserie chicken to "round" it out so to say... so I may end up doubling the sauce. We'll see. Also, shout-outs to a fellow MPM contributor from whom I linked to this recipe at Kraft. I don't remember who you are - but thank you! Looks delish!

Tuesday: Baked Potato Bar... an oldy but goody from college cafeteria days. Ours will consist of big, yummy and perfectly baked potatoes (I like to rub the skins with EVOO and kosher salt before baking - yum!) and toppings will be cheese, sour cream, broccoli (left over from Monday), and real bacon bits.

Wednesday: We have dinner at some friends' house - I have to bring the dessert!!! HELP - I need suggestions! I'm not very creative in the dessert category. Must be family friendly and serve four adults and three children. Suggest away!!

Thursday: French Bread Pizza - oh la la! This is simply a big old loaf of french bread split down the middle and heaped with pizza toppings and baked. A caesar salad will be the side. YUM!

Friday: Tostadas!! Anything mexican usually get devoured around our house... tortillas piled with beans and cheese and baked. Then fresh toppings like tomatoes, lettuce, corn and sour cream gets added to finish it all off. I'll serve this with Dole Southwest bagged salad - the kids love this!! (I know, bagged salad, but not croissants.)
