This is the Thanksgiving edition! I don't have to cook a Thanksgiving meal this year... but I do have to contribute by bringing a little something for the amazing hostesses that are having us this year. My mom's celebration was today and I brought a scrumptious cheese tray from a recent stock up at Trader Joe's. The sampling included Cranberry Chevre (Goat Cheese), Double Cream Gouda, Brie and Apricot Stilton. All of them were AMAZING of course. Along with our cheese was assorted crackers and bread and some Mango Ginger Chutney (that I always just love with Brie - such a great contrast!), usually I do dried fruits as well, but forgot this time!
Any who... enough swooning about cheese (however, I could do that all day!) we still need to eat for the rest of the week!
Monday: Last week's tostada's... we never got to Friday's tostadas and I had some fresh ingredients that I wanted to use up so I made it into a mexican layered thingy. I don't want to call it a lasagna or a casserole, because really it's neither of those. Basically I layered tortillas, rice, beans, salsa, chicken, cheese and more salsa in a 8x8 pan and froze it on Friday. Since we were gone for the weekend... I'll pull it out tomorrow and bake it and serve with a salad!
Tuesday: BBQ Turkey Sandwiches & Celery Salad from November 2008 Real Simple. I snagged some leftovers from my mom's that I will use. Can't wait to try this recipe!!
Wednesday: Indian food... this has been on and off the list for a couple of weeks and never eaten. I have everything I need for the meal in the pantry, I just will pick up some Naan bread from the grocery store and we are set to go!
Thursday: Thanksgiving Day at my husband's families home. I'll bring an appetizer (probably another cheese tray, since they are so easy).
Friday:Trader Joe's Green Bean Casserole. I tried this at the store on Saturday and it was so amazing and fresh tasting! I haven't had GBC since who knows when... but even the kiddos liked it. It includes one bag of frozen green beans, one container of frozen spinach dip and then crunchy onions on top. ALL from TJ's. My mom had the idea to add a can of their chunk chicken for extra protein and there it all is! And probably only cost about $12 total.
Saturday: Whatever. If we can even bring ourselves to eat after two Thanksgiving feasts in one week... we'll all fend for ourselves!
